Summer Tomato, Onion and Cucumber Salad
Yield: 6 servings; 1.5 cups per serving
3 tbsp. vinegar
1 tbsp. olive oil
1 tsp. honey
1/2 tsp. freshly ground pepper; more to taste
2 medium cucumbers
4 medium tomatoes, cut into 1/2 inch wedges
1 Vidalia, or other sweet onion, halved and cut into very thin slices
2 tbsp. coarsely chopped fresh herbs, such as parsley, chives, tarragon or basil
- Whisk vinegar, oil, honey and pepper in large shallow bowl.
- Remove alternating stripes of peel from the cucumbers. Slice the cucumbers into thin rounds. Add the cucumber slices, tomatoes and onion to the dressing. Gently toss to combine. Let stand at room temperature at least 30 minutes, up to an hour.
- Just before serving, add fresh herbs and toss again.
