Orange Glazed Mixed Vegetables
2 cups frozen California Blend vegetables (broccoli, cauliflower, carrots)
1/2 teaspoon grated fresh orange peel
1/4 cup fresh squeezed orange juice
1 tablespoon Dijon mustard
1 teaspoon low sodium soy sauce
Cook vegetables on stove top or in microwave according to package directions. While vegetables are cooking, mix orange peel, orange juice, mustard and soy sauce in a small bowl. Drain vegetables and toss with orange juice mixture. Serve hot or at room temperature.
