Grilled Vegetable Pitas

1 yellow pepper, cut in strips Grilled Vegetable Pitas

1 red pepper, cut in strips

1 orange pepper, cut in strips

1 green pepper, cut in strips

Half red or white onion, cut in strips

Zucchini, diced

Lemon hummus (or flavor of your choice)

Whole wheat pitas

Extra virgin olive oil

Heat a tablespoon of olive oil in a large grill pan. When hot, add all fresh vegetables to the pan to grill. When all vegetables are cooked through (about 10 minutes), move the vegetables to the side of the pan to keep warm. Brush your pitas with a bit of olive oil and place on the grill pan to lightly toast. Remove pitas and spread on a layer of hummus. Place grilled vegetables on next and serve open-face style.

Emily“These grilled vegetable pitas are so versatile. Use whatever garden vegetables you wish to make a new creation every time. I find that the lemon hummus adds a bright flavor to the vegetables, but you can experiment with different hummus flavors each time. This recipe is extremely quick & easy—not to mention colorful—and is a fun vegetarian dish to integrate into your menu plan!”
