Flourless Peanut Butter Chocolate Chip Cookies
(Gluten-Free and low FODMAP)

A low FODMAP diet may be used to help treatment of symptoms if Irritable Bowel Syndome (IBS), please ask your doctor/dietitian before beginning this regiment

Ingredients
1 cup of peanut butter or PB2 (De-fatted peanut flour—mix 16 Tbsp of powder to 8 Tbsp of water). PB2 is an all-natural high protein, low sodium, low calorie product). Recipe is calculated using PB2
¾ cup of sugar
1 large egg
½ tsp baking soda
1 cup of chocolate chips (mini, or Enjoy Life brand which are dairy-free)


Directions
Mix all ingredients together except the chocolate chips until smooth. Once mixed, stir in the chocolate chips.

Use a cookie scoop or 2 spoons to spoon dough onto a greased cookie sheet.

Bake for 12 minutes at 350 degrees. Let cool on the cookie sheet for 5 minutes before transferring onto a cooling rack.
