Crunchy Veggie Wraps
1/4 cup reduced-fat mayonnaise
(and /or hummus, low fat cream cheese, salsa, mustard)
1 Tbsp. fresh lime juice (optional)
4 8-inch whole-wheat flour tortillas
2 cups fresh spinach leaves or arugula, washed and well-dried with stems removed
1 small ripe avocado, peeled, pitted and cut into slices
1 medium red or yellow bell pepper, seeded and cut into strips
1 medium shredded carrot or cucumber, or 1 cup shredded zucchini
In a small bowl, combine the mayonnaise and lime juice.
Heat the tortillas in the microwave for 15-20 seconds on high to make it easier for you to roll them. Spread each tortilla evenly with the mayonnaise mixture.
Arrange the spinach leaves on top of each tortilla, then the avocado slices, bell pepper and carrots. Roll the tortillas up tightly. Place the seam sides down on the serving plates.
