Cinnamon Chicken Salad
2 tablespoons light mayonnaise
2 tablespoons nonfat plain yogurt
½ teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground black pepper
1/8 teaspoon salt (optional)
2 cups cooked and cubed chicken
1 cup seedless grapes
½ cup sliced celery
8 large Roman lettuce leaves
Mix the dressing ingredients and set aside.
Combine chicken, grapes and celery in a medium bowl. Add dressing and toss.
Serve on lettuce leaves.
Makes 4 servings (4 cups)
