Black Bean Soup      

1 cup chopped onion
¾ cup chopped celery
2 tsp. minced garlic
1 ½ cups lower sodium beef broth
2 cans (15 oz. each) black beans, drained and rinsed.
½ cup salsa, thick and chunky
1 ½ tsp. cumin
½ tsp. onion powder
¼ tsp. dried oregano


Combine all ingredients in a saucepan. Cover and simmer for 20-25 minutes or until vegetables are tender.

Makes 5 servings (5 cups)
Serving Size: 1 cup
