3 oranges
2 grapefruits
3 lemons
1 tablespoon chopped jalapeno or serrano pepper
2 tablespoons chopped fresh mint**
2 tablespoons chopped shallots or red onion
1 tablespoon olive oil
1/4 teaspoon salt
Fresh ground black pepper to taste

**Fresh chopped cilantro can be substituted if preferred.

Peel and remove pith (white edges) of the citrus fruit. Cut the fruit into segments, or dice if you prefer a finer texture. Place in a bowl. Add remaining ingredients and mix. Cover and refrigerate for at least a half hour for flavors to blend.

Serve with fish, poultry or baked chips.

Makes 8 servings.
