Fruit bowl ingredients
1 grapefruit
2 oranges
2 clementines
1 lime (or use 1/2 the lime and save the other 1/2 for topping)
2 teaspoons grated fresh ginger
2 tablespoons sugar
Topping ingredients
1/2 lime
2 tablespoons powered sugar
1 egg white
Peel and remove pith (white edges) of the citrus
fruit for the fruit bowls. Cut the fruit into segments and place
in a large bowl. Add sugar
and ginger and
mix well to coat segments. Chill
for one
to two hours. Divide equally in four oven safe dessert bowls.
Boil a pan of water. Zest
and juice the half lime. Place lime zest, one teaspoon
of the lime juice, egg white and powered sugar in a heatproof
bowl. Set the heatproof bowl over the pan of boiling water. Beat
the egg white mixture until it reaches meringue consistency (forms
soft peaks when mixer is lifted up from the mixture.)
Preheat oven on Broiler setting. Top each
fruit bowl with meringue. Place on top rack of over an broil
for 3 - 5 minutes. Serve.
