1 ½ cups wheat bran
1 cup buttermilk
1 cup all-purpose flour

cup brown sugar
1 teaspoon baking soda
2 egg whites

Directions
1. In a small bowl, combine bran and buttermilk. Soak for 10
minutes.
2. Preheat oven to 350 degrees. Lightly grease muffin cups.
3. In a large bowl, mix together flour, brown sugar and baking
soda. Stir in bran mixture and egg whites. Fold in apple. Divide
batter into 12 muffin cups.
4. Bake for 16-18 minutes, or until a toothpick inserted into the
center comes out clean. Cool 5 minutes. Remove from pan.
